In an attempt to provide sufficient energy to high-producing and early lactating cows, the proportion of high starch concentrates in the diet is increased at the expense of fiber or forage content.
Diets which are high in concentrates are highly fermented in the rumen and are considered potentially acidogenic.
Excessive starch fermentation by the rumen microbes produces large amounts of volatile fatty acids (VFA), which are an important energy source for the cow.
However, if the starch supply to the rumen exceeds the capacity of favorable rumen microorganisms to digest the starch and convert it to VFA, the unfavorable microorganisms will, instead convert it to undesirable lactic acid, more stronger acid 10 times than the VFA.
